Here are the habits that help gyms keep payments and renewals under control.
Make auto-pay the default
When members save a card and pay automatically, there is far less to chase. Offer it at sign-up as the normal way to pay, not as an extra option. Remind members before the due date

Review it every week
Set a fixed time each week to look at outstanding balances and upcoming renewals. A few minutes of review stops small amounts becoming old debts.
